Orecchiette con broccoli e acciughe

Broccoli and anchovies, what a combo.

Ingredients

  • 350g orecchiette
  • Olive oil
  • 1 small tin anchovies (6 fillets)
  • 4 garlic cloves
  • ½ a lemon's juice
  • 400g broccoli, chopped
  • 50g breadcrumbs
  1. Boil the pasta water and cook the pasta as per the required time, remembering to salt the water once the pasta is in. Add the broccoli when the pasta goes in.
  2. Heat the olive oil and add the crushed garlic.
  3. Once it has some colour, add in the anchovies and lemon juice, and allow them to melt in to a sauce. Remove from the heat when it looks about right (use your chef instincts).
  4. Add the cooked pasta and broccoli in together with the anchovy sauce, and sprinkle in the breadcrumbs. You can cook them at an earlier stage, but the later you add them the more crunch they offer.

Serves 4.
