Ingredients
- 350g penne
- 200-250g pancetta
- 2 onions
- 700ml passata
- 2 garlic cloves
- Mixed herbs
- 1 red chilli (or black pepper)
- 1 glass red wine
Instructions
- Dice onion and fry in some olive oil with the crushed garlic.
- Pierce the chilli and add to the frying mix along with the pancetta.
- After a few minutes, add in the passata, along with the herbs and season to taste.
- Add red wine and allow to simmer for 30min.
- Boil the pasta water and cook the pasta as per the required time, remembering to salt the water
once the pasta is in.
Serves 4 + sauce for 2 more portions.
