Ingredients

  • 350g penne
  • 200-250g pancetta
  • 2 onions
  • 700ml passata
  • 2 garlic cloves
  • Mixed herbs
  • 1 red chilli (or black pepper)
  • 1 glass red wine

Instructions

  1. Dice onion and fry in some olive oil with the crushed garlic.
  2. Pierce the chilli and add to the frying mix along with the pancetta.
  3. After a few minutes, add in the passata, along with the herbs and season to taste.
  4. Add red wine and allow to simmer for 30min.
  5. Boil the pasta water and cook the pasta as per the required time, remembering to salt the water once the pasta is in.

Serves 4 + sauce for 2 more portions.
