Pasta with tuna

Ingredients

  • 350g penne
  • 2 tins of tuna
  • 2 medium onions
  • 700ml passata (or more to boost serving count)
  • 3 cloves of garlic
  • Olives or capers (optional)
  • Handful of basil
  • Dash of white wine (and drink the rest)

Instructions

  1. Dice up onion and crush or chop the garlic and fry in some olive oil for 5 minutes.
  2. Add in white wine to boil off for a minute or two, then add passata, with some salt.
  3. Flake tuna into the sauce, adding pepper and dried herbs too, plus the olives or capers. Allow to simmer for about 30 minutes.
  4. Boil the pasta water and cook the pasta as per the required time, remembering to salt the water once the pasta is in.
  5. Just before taking off the heat, tear up basil and add it in (so it's still nice and fresh). Then combine the pasta and sauce together and serve, remembering first to allocate any portions of the sauce for freezing.

Serves 4, but can be boosted to 6 with some more passata to freeze portions.
