Taralli

Puglia staple.

Ingredients

  • 500g flour
  • 150ml olive oil
  • 250ml water
  • 2 tsp salt
  • 2 tsp fennel seeds (could add a bit more next time)
  • 150ml white wine

Instructions

  1. Combine flour and water in a bowl, and drizzle over olive oil and white wine.
  2. Make a nice dough and knead on a floured surface for about 10 minutes.
  3. Cut off chunks and roll out a rope and chop into segments.
  4. Boil the taralli in water until they rise to the surface, and then skim them off (do this in batches usually so as not to crowd them). Leave to dry on a dish towel.
  5. Then place on a tray to bake at a nice high temperature (200C) for a little while, about 30 minutes, but you need to watch them.

I can't remember how many this makes, but it's about 2 tubs' worth.
