Ingredients

  • Medium potatoes (1 per person + 1 extra)
  • Half an onion, chopped (spring onion is good too)
  • Parsley to taste, chopped (optional)
  • Mayonnaise to taste
  1. Cook potatoes until soft but not floury (20-25 minutes).
  2. Remove from hot water and allow to cool; chop as desired (bite-size is preferrable).
  3. Mix in the chopped onion, parsley, and mayonnaise.
