Ingredients
- Medium potatoes (1 per person + 1 extra)
- Half an onion, chopped (spring onion is good too)
- Parsley to taste, chopped (optional)
- Mayonnaise to taste
- Cook potatoes until soft but not floury (20-25 minutes).
- Remove from hot water and allow to cool; chop as desired (bite-size is preferrable).
- Mix in the chopped onion, parsley, and mayonnaise.
