Ingredients
- 125g butter
- ¾ cup soft brown sugar
- 1 extra large egg, beaten
- ¾ cup cake flour
- 1 tsp cinnamon
- ½ tsp mixed spice
- 1 ½ cups rolled oats
- ½ cup dessicated coconut
- 100g chocolate chips
- Pinch of salt
Instructions
- Cream butter and sugar together. Add the egg gradually while beating the mixture.

Sift the cake flour and spices together (along with the salt), and add to the creamed mixture.
- Stir in the oats and coconut.
- Lastly, add the chocolate chips to the mixture.

Roll slightly larger than teaspoon-sized dough portions to make small balls, and place them on
greased baking sheets.
- Press the dough balls with the back of a fork and bake for 12-15 minutes at 180°C.
Makes about 25-30 cookies.
