Caterina's chocolate chip cookies

Ingredients

  • 125g butter
  • ¾ cup soft brown sugar
  • 1 extra large egg, beaten
  • ¾ cup cake flour
  • 1 tsp cinnamon
  • ½ tsp mixed spice
  • 1 ½ cups rolled oats
  • ½ cup dessicated coconut
  • 100g chocolate chips
  • Pinch of salt

Instructions

  1. Cream butter and sugar together. Add the egg gradually while beating the mixture.
  2. Sift the cake flour and spices together (along with the salt), and add to the creamed mixture.
  3. Stir in the oats and coconut.
  4. Lastly, add the chocolate chips to the mixture.
  5. Roll slightly larger than teaspoon-sized dough portions to make small balls, and place them on greased baking sheets.
  6. Press the dough balls with the back of a fork and bake for 12-15 minutes at 180°C.

Makes about 25-30 cookies.
