Place meat portions in preheated oven and cook according to instructions.
Whilst meat portion is cooking, cook the onion until transparent, then add the mushrooms and
cook until soft.
Add the sun-dried tomatoes, chickpeas and broccoli (pre-cooked in microwave), spices, herbs and
balsamic vinegar and allow to warm through;
add a little water if more sauce is desired.
Finally, add spinach in the last few minutes and stir until it has wilted.
